Corn Sweet / Maiz Dulce
Sweet corn (Zea mays convar. saccharata var. rugosa) is a variety of maize with a high sugar content. Unlike field corn varieties, which are harvested when the kernels are dry and mature (dent stage), sweet corn is picked when immature (milk stage) and prepared and eaten as a vegetable, rather than a grain. Maize was first cultivated in Oaxaca, Mexico a little over 7, 000 years ago.
Supersweet Sh2 shrunken varieties need warm soil temperatures to germinate properly. Also be sure to separate plantings of sh2 varieties from other corns to prevent cross pollination which can reduce or eliminate the supersweet taste.
Separations can be by distance (at least 100 meters) or time.
